“The Specific Carbohydrate Diet” with Jenny Lass

 

Jenny Lass will give basic tips on how to implement the Specific Carbohydrate Diet – learn about everything from important kitchen tools to sourcing and substituting key ingredients. Jenny will provide strategies for overcoming common challenges faced when starting the SCD, as well as instruction on how to fit healthy cooking into a busy schedule. She will also discuss common cooking methods and how to adapt your favorite recipes to be SCD “legal.”

Jenny Lass is a medical writer who, for the love of a good meal, became a cooking instructor, menu consultant and bestselling cookbook author. Jenny is known for her fine appreciation of all things edible, but when she was diagnosed with celiac disease in 2001, she feared that she would never eat her favorite meals again. Fortunately, she discovered that she had a knack for creating the most mouth-watering, digestible dishes that people with – and without – fussy stomachs ever laid their lips on, so she co-wrote the bestselling Grain-Free Gourmet cookbook series published by Whitecap Books and began teaching cooking classes and doing corporate consulting to help people with digestive disorders rediscover the joy of eating. Jenny recently completed the holistic nutrition program at the Canadian School of Natural Nutrition and expects to graduate by August 2010. She continues to find new ways to break cooking barriers and spread the joy of healthy, simple, delicious food.
